Oat and Raisin Cookies Recipe
Makes approximately 10 cookies
Ingredients
- 50g/1 ¾ oz/10 tsp butter
- 125g/4 ½ oz/ ½ cup caster sugar
- 1 egg, beaten
- 50g/1 ¾ oz/ ½ cup plain flour
- ½ tsp salt
- ½ tsp baking powder
- 175g/6oz/2 cups porridge oats
- 125g/4 ½ oz/ ¾ cup raisins (Ready to eat dried apricots can be substituted for the raisins)
Method
- Preheat the oven to 180oC/Gas 4/160oC fan oven
- Lightly grease 2 baking trays ( I normally use baking paper too).
- In a large mixing bowl, cream together the butter and sugar until light and fluffy (the mixture will appear to be a bit crumbly, this is normal)
- Add the beaten egg gradually and beat until well combined.
- Sieve the flour, salt, and baking powder into the creamed mixture. Mix well.
- Add the porridge oats and mix well.
- Place spoonfuls of the mixture on the baking trays and flatten with a fork.
- Bake in the pre-heated oven for 15 minutes.
- Leave to cool on a wire rack.
