Chocolate Chunk Cookies Recipe

Makes approximately 14 cookies

Ingredients

  • 100g/4oz butter or margarine, softened (I use butter)
  • 100g/4oz light muscavado sugar
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 140g/5oz plain flour
  • ½ tsp baking powder
  • 85g/3oz porridge oats
  • 200g/8oz plain chocolate, chopped into chunks (I use Cadbury's Bournville)

Method

  • Preheat the oven to 180oC/Gas 4/160oC fan oven – cook from cold
  • Grease two baking sheets (I normally use baking paper too).
  • Beat the butter and sugar until light and fluffy.
  • Beat in the egg and vanilla
  • Sift in the flour, baking powder.
  • Add the porridge and chocolate.
  • Using a dessert spoon, put 14 heaped spoonfuls of the mixture onto the baking sheets and flatten with a fork.
  • Bake for about 10-12 minutes.
  • Cool on a wire rack.
